1 can (15 ounces) black beans, drained and rinsed
1 can (11 ounces) sweet kernel corn, drained
4 large tomatoes, chopped
1 avocado, peeled and chopped
1 large green pepper, chopped
6 green onions, chopped
1 large jalapeño, diced
1/4 cup fresh cilantro, chopped
1/4 cup fresh lime juice
2 tablespoons olive oil
1 teaspoon salt
2 teaspoons ground cumin
Combine all ingredients in a large bowl and toss gently. Cover and chill. Serve with baked tortilla chips.
Serving size: 1/2 cup. Per serving: 113 calories, 4 g protein, 4 g fat, 5 g fiber, 16 g carbohydrates, 315 mg sodium.
