1 pound ground beef
 1 pound ground pork
 2 eggs, beaten
 1 cup salsa, divided
 1/2 cup Italian breadcrumbs
 1/2 cup minced onion
 1 teaspoon salt
 1/2 teaspoon pepper
 1 can (4 ounces) chopped green chiles
 1 cup shredded Monterrey Jack, divided
 1 cup sour cream
- Preheat oven to 400 degrees. Spray a 9×5-inch loaf pan with cooking spray. Mix together beef, pork, eggs, 1/2 cup salsa, breadcrumbs, onion, salt and pepper.
 - Pack half of mixture in loaf pan. Spread chiles and 1/2 cup cheese over top. Pack remaining meat mixture on top and bake for 55 to 60 minutes.
 - Remove from oven and sprinkle with remaining cheese. Allow to stand for 10 minutes.
 - Combine sour cream and remaining salsa. Serve meatloaf slices with sour cream mixture.
