2 cups frozen cranberries, thawed
1/2 cup walnuts
1 1/2 cups sugar, divided
2 eggs
3/4 cup butter, melted and cooled
1 cup flour
1/4 teaspoon salt
1/4 teaspoon almond extract
Preheat oven to 350 degrees. Combine cranberries, walnuts and 1/2 cup sugar and spread over bottom of greased 10-inch springform pan or pie plate. Mix eggs, butter, reserved sugar, flour, salt and extract until smooth and pour over cranberry-walnut mixture. Bake 40 minutes or until inserted toothpick comes out clean.
Servings: 8. Serving size: 1 slice. Per serving: 432 calories, 5.3 g protein, 21.4 g fat, 53.4 g carbohydrates, 2.1 g dietary fiber, 93 mg sodium, 38.7 g sugars, 98 mg cholesterol
