2 cups rice flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup plus 2 tablespoons butter
1 1/4 cups plus 4 tablespoons sugar, divided
3 bananas
4 large eggs
1 tablespoon lemon juice
Preheat oven to 350 degrees. Sift flour, baking powder and salt. Beat butter, 1 1/4 cups sugar and bananas together until smooth. Stir in eggs. Add banana mixture to flour mixture and stir until just blended. Pour into large loaf pan and bake 1 hour, 15 minutes or until pick inserted in center comes out clean and bread is just firm. Cool 10 minutes. Mix 4 tablespoons sugar and lemon juice together and drizzle over top.
