Anthes’ easy waffles are a delicious breakfast. They’re crisp on the outside and fluffy inside. Serve warm, topped with fresh fruit or maple syrup.

1 1/2 cups flour
1 cup quick-cooking oats
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1 1/2 cups milk
2 eggs, slightly beaten
1/8 teaspoon vanilla extract
6 tablespoons (3/4 stick) butter, melted
2 tablespoons brown sugar

1. Preheat oven to 200 degrees. In a large mixing bowl, stir together flour, oats, baking powder and cinnamon.

2. In a small mixing bowl, whisk together milk, eggs, vanilla, butter and brown sugar.

3. Add wet ingredients to flour mixture and stir to combine.

4. Preheat and lightly grease waffle iron. Pour batter into waffle iron, close and cook according to manufacturer’s directions. Keep cooked waffles warm in preheated oven, and repeat with remaining batter.

Serves 6.
