1 cup peanut butter
3/4 cup soy sauce
1/2 cup pineapple juice
1/2 ounce coriander
1 ounce cumin
3 cloves garlic, minced
2 teaspoons crushed red pepper
1/4 cup molasses
3 3/4 pounds pork or beef, cut in 1-inch cubes
Mix all ingredients except meat until smooth. Put in plastic bag. Add meat and marinate for 24 hours. Thread on wooden skewers (three to a stick). Bake at 325 degrees for 25 to 30 minutes.
(You may add pineapple chunks and /or green pepper slices between meat cubes before baking.)
Servings: 12. Serving size: 1 skewer. Per serving: 447 calories, 36.4 g protein, 25.4 g fat, 14.1 g carbohydrates, 2.3 g dietary fiber, 1,083 mg sodium, 7.3 g sugars, 82 mg cholesterol
