1 can garbanzo beans (16 ounces)
1 cup chopped grape tomatoes
1/2 cup chopped green onions
1/2 cup chopped cucumber
2 cloves garlic, minced
3/4 cup olive oil
Salt and pepper to taste
1. Drain and rinse garbanzo beans.
2. In a large bowl, combine beans, tomatoes, onions, cucumber and garlic.
3. Add oil, salt and pepper, and toss.
4. Chill about 1 hour before serving.
Servings: 6. Serving size: 6 ounces. Per serving: 243 calories, 0.24 g protein, 26.29 g fat, 0.95 g carbohydrates, 0.33 g dietary fiber, 98 mg sodium, 0.44 g sugars, 0 mg cholesterol
You can also add some fresh basil and oregano or other vegetables according to your preferences.
