This snack originates in central Mississippi, where Faubus’ grandmother and her siblings grew up enjoying it. Faubus now makes it for her own grandchildren. Sweet and satisfying, sometimes the best snacks are the simplest.

5–6 saltine crackers
1/4 cup peanut butter
1 cup mini marshmallows
Cook’s Note: It’s easy to burn these melty treats under the broiler, and broiler temperatures vary by model. Keep a close eye on the crackers, and don’t let them stay in more than 2 minutes.
1. Preheat oven to broil.
2. Place crackers on a baking sheet. Spread peanut butter on each cracker. Top with mini marshmallows.
3. Broil 1–2 minutes or until marshmallows are lightly browned.
Serves 1.
