3/4 teaspoon salt
1 1/2 cups grits
3 cups sharp cheddar cheese shredded
1 cup Monterey jack cheese shredded
2 jalapeños, seeded then finely minced
1/4 cup unsalted butter
Pinch cayenne pepper
1 1/2 tablespoons minced garlic
3 large eggs, beaten

Preheat oven to 350 degrees. Bring 4 1/2 cups water and salt to boil. Add grits, stir, reduce heat to low and simmer for 5 minutes. Remove from heat. Add cheeses, jalapeños, butter, cayenne and garlic. Butter 13 x 9-inch glass baking pan. Gradually add beaten eggs to grits mixture, stirring constantly so eggs do not curdle. Spread evenly in pan and bake 30 minutes.

Servings: 16. Serving size: 1/2 cup. Per serving: 206 calories, 9.4 g protein, 12.4 g fat, 12.3 g carbohydrates, 0.7 g dietary fiber, 292 mg sodium, 0.4 g sugars, 70 mg cholesterol
