1 cup bulgur wheat
2 tomatoes, seeded and chopped
1 can (15 ounces) black beans, drained and rinsed
1 cup frozen corn kernels, thawed and drained
1/4 cup chopped cilantro
1 jalapeño, seeded and finely chopped
3 tablespoons fresh lime juice
1 teaspoon lime zest
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon red pepper
- Place bulgur in a large bowl and add 1 cup of boiling water. Cover and let stand for 30 minutes.
- Fluff steamed bulgur with a fork and add remaining ingredients. Toss gently. Cover and chill for 2 hours.
- Serve cold or at room temperature.
