1 large white onion, chopped
1 tablespoon vegetable oil
10 ounces frozen chopped spinach, thawed and pressed dry
5 large eggs, beaten
3 cups shredded Muenster cheese
1/2 teaspoon pepper
1. Preheat oven to 350 degrees. Grease a 10-inch pie dish.
2. Sauté onion in oil in a large skillet until tender. Add spinach and cook until excess moisture evaporates. Set aside to cool.
3. Combine eggs, cheese and pepper, and stir into spinach mixture in the skillet.
4. Pour into pie dish and bake 30 minutes or until set.
