1 cup flour
1 cup sugar
1/2 cup sweet ground chocolate powder
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sour milk
2 eggs, beaten
1/4 cup butter, melted

Sift dry ingredients into a large bowl. Add milk and eggs. Beat by hand until just blended. Will be a bit lumpy. Add melted butter gradually while slowly beating batter smooth. Let batter rest 5 minutes before pouring into hot waffle iron. Will rise. If your waffle iron has a locking lid, leave it unlocked to let the batter rise. Makes 10-12 square waffles.

Cook’s Tip: Pasteurized milk doesn’t really sour, it spoils. To produce a cup of soured milk from pasteurized milk, add 1 1/2 tablespoons vinegar to enough milk to make 1 cup.
